Baked Caprese Sub

The favor combination of a Caprese salad has rapidly become one of my husbands favorites! After making several salads, I decided to put a simple twist to turn the classic into a great lunch or dinner option.

What You Will Need: Chicken (I have already cooked boneless, skinless breast & have sliced it thin), French bread, tomatoes, red onion, mozzarella cheese, fresh basil, salt/pepper and balsamic vinegar. 

Preheat your oven to 350.


Cut the bread to your desired sandwich size & place onto a baking sheet. On the bottom half, layer your sliced chicken breast followed by thinly sliced red onions.


Tomatoes go next, sprinkle with salt/pepper & add the strips of fresh basil. 


Place thick pieces of mozzarella cheese and drizzle the top half of the bread with some of the balsamic vinegar. 


Bake open face style in the oven for 5-10 minutes till the cheese is melted. Add an extra splash of balsamic vinegar if desired. 


Place the top on the sandwich, slice & serve!
