The first time I made this for my husband, he had no clue that it wasn't rice! And since then, we haven't had rice as our side dish on stir fry nights. Bonus is that my son absolutely loves it too!
What You Will Need: Cauliflower (I used a cheese grater but a food processor works too), diced onions, diced carrots, soy sauce & frozen peas (never canned peas!).
In a large skillet with some olive oil, sauté your onions and carrots for 3-5 minutes.
Add in your grated cauliflower. Salt, pepper & stir. Allow to cook another 3-5mins.
Couple dashes of soy sauce.
Add in the frozen peas. Toss & cook for another 2-3mins. Then you are ready to serve!
Feel free to add ingredients such as ginger, sesame seeds, scallions or an egg at the end. Because I make this for my son, I keep it pretty simple but its still delicious!
It looks good, tastes good & is such a healthier option on your dinner plate!
