Charred Corn Salsa

One of my favorite things to make in the summer/fall is batches & batches of salsa. I put it on everything...mexican dishes, eggs, grilled chicken, baked sweet potatoes, salads & lots of chips! I love that with just a couple ingredients, you get a bowl full of awesomeness!!! 

What you will need: Charred corn (cooked on the grill), roasted jalapeƱo peppers, tomatoes, onion, fresh lime juice, cilantro, salt, chili power & cumin.


First you will have to cut & squeeze the juice out of your tomatoes. Give them a rough cut & place them in a food processor. 


Puree to your liking. Chunky or smooth.


Add diced onions, charred corn & roasted jalapeƱos. Squeeze the juice of the whole lime over the mixture.


Add a big bunch of chopped cilantro & mix.


Season with salt, chili power & cumin. Combine, taste & allow to chill for at least 15 minutes before serving.


Each bite is just a massive mouth full of flavor! Cool, crunchy, fresh, spicy & if you use sweet corn, you will get this nice sugar & spice element. 


I enjoyed it on top of some simple beef taco's, while my husband decided he wanted to make his entire dinner just chips & salsa!
