Fiesta Breakfast Burrito

Need a filling, tasty breakfast when your on the go???

This Fiesta Breakfast Burrito is great....especially for the man in your life. (My husband loves these during the week to enjoy on his way to work).

Now, keep in mind that these can be made a million different ways...add or remove ingredients to suit your personal taste.

What you will need: Eggs, Red Onion, Bell Pepper, Cheese, Cilantro, Chili Powder, Cumin, Tortilla Shells, Butter/Olive Oil, Sour Cream & Hot Sauce.


Ok, lets get started. Butter & some oil in the pan....medium heat.


Small diced Red Onions in the pan. 


Now throw in the Bell Pepper. Stir and allow to cook till tender.


Throw in some fresh chopped cilantro for a burst of flavor and a pop of color. If you are not a fan of cilantro, some sliced green onion/scallions would be great too.


Little salt, pepper, cumin & chili powder.


Stir, making sure the onions and peppers get coated in the spices.


Add in a small pat of butter, swirl to melt, then add a whisked egg. I use one egg per burrito. 


Stir eggs around till your desired doneness, then top with cheese of choice. I love Pepper Jack cheese and go through probably an unhealthy amount per week. 


Lay out your tortilla, I use extra large but you can use smaller ones, just adjust the amount you are putting inside.

Spread out a little sour cream. I love the cool, richness that the sour cream adds to the breakfast. 


Now, add the hot sauce of your choice. Cholula is my go to hot sauce but whatever you have will work.


Place the egg mixture onto of the sour cream.


Fold up the sides...


Then start rolling it up from the bottom.


Once your finished, wrap it with some foil to keep it warm. The heat inside the foil will also seal up the edges and soften the tortilla. Even when I make this to eat at home, Ill wrap it up and let it sit for 5 minutes. 


Tip: If your mornings are a little hectic, make the burrito the night before. Keep it refrigerated, reheat in the AM (pop it in the microwave for 1-1 1/2 mins), wrap it up in the foil and grab your coffee.
