Simple Balsamic Tomato Sauce



Easy Roasted Tomato Sauce

What you will need: tomatoes of your choice (I have 9 Roma's), 1 Whole Onion, Half of a Bell Pepper, 8 Cloves of Garlic, Balsamic Vinegar, Olive Oil, Dried Thyme, Basil, Oregano, Salt & Pepper.

Preheat your oven to 400.


                                           

Quarter the tomatoes and place on a baking sheet

                                    

Cut & add the onion



Bell Pepper & Peeled whole cloves of garlic

                                   














Couple turns around the pan with the Balsamic & Olive Oil. Salt and Pepper generously. 


Into the oven for 1 to 1 1/2 hrs. Make sure you flip/rotate them every 15 mins.


Once they are roasted & cooled, place them into a bowl. At this point I sprinkled on some Italian Herbs.....Dried Oregano, Basil & Thyme....a tsp of each. 


This part can be done in a blender, food processor or with an immersion blender. 

Simply puree the mixture up till desired texture. I like to leave mine very rustic with chunks of tomato running through.


Apologies for not having a photo of the finished product. 

Once it is pureed, use it on any Italian inspired dish. I spread mine over top breaded chicken breast for an awesome Chicken Parmesan, it was the sauce for my pork meatballs with peppers and onions & I also used it as the sauce for my dads favorite pizza with pepperonis and onions.

It is fresh, hearty, full of flavor and is much healthier then buying jars of pasta sauce that have a ton of sodium.
